Summer in a bite, these orange dreamsicle pie bars are packed with orange flavor from freshly squeezed orange juice and grated orange rind! Forget the orange flavored jello, these orange dreamsicle pie bars taste so much better!
I’ve been torn between naming these bars orange creamsicle pie bars or orange dreamsicle pie bars. Auto-correct lets me know creamsicle is the correct word, but doesn’t it know how dreamy these bars are?
I took the bars to a get together with my mommy friends while we let the kids run around at the playground and we all sat around the picnic table oohing and ahhing, raving about these bars. My friend, who has been on a Paleo diet for months now, gave in a had a full bar! Yeah, they are dreamy!

I’ve been dreaming of recreating this favorite summer treat since last year but all the recipes I’ve seen called for orange jello or some sort of pudding. It just didn’t seem right to me. I wanted the orange flavor to come from oranges, not from a package.
After playing around with different ratios I finally got it. Orange dreamsicle pie bars that were so soft and creamy and so packed with orange flavors it kicks you in the face!
Do you see those orange specks in the bars? That’s freshly grated orange rind. 6 oranges! And later I squeezed the juice and used it in the bars.
The bars are so fresh, it’s unbelievable!

Are they to be eaten from frozen?
Hi Stephanie,
You can eat them frozen like ice cream, but I prefer to leave mine to soften a little bit, maybe 10-15 minutes at room temperature.

I did notice that there is a lot of liquid for amount of cream cheese in recipe and the 1 review given said it was to soft even out of freezer. I am going to cut down on liquid and not use warm water but cold when cutting, it is like doing finish frosting on a cake if you use warm the frosting will melt and give you runs and sags.
Hi Suzanne,
I would not recommend cutting the liquid. The citric acid in the orange juice combined with cream cheese is what helps the filling settle. That’s the basic rule for no bake cheesecake – cream cheese and lemon juice!
The warm water is used to warm the knife. You have to wipe dry the knife before cutting. This is just my preference. You can definitely use cold water..
My bars started to soften after about 45 minutes at room temperature. In the summer time, probably it softens after 15-20 minutes.
I thought of cutting the condensed milk by 2 tbs. and the heavy cream by 1/4 c. then adding back in as needed. I make a lot of no bakes and while you do need the right amount of cheese to acid, the other liquids are more than mine have ever called for in over 45 yrs. of baking.
Come back and let me know what you changed and how it turned out. You got me curious.

Are you using orange zest, or the entire rind?
Thank you!
Hi Mandy,
just grate the zest. If you use the entire rind, it will turn out bitter.
Are you using orange zest, or the entire rind?
What’s the best way to grate the rind? Thanks!
I use a zester from OXO, but you can use any zester you have

Just wondered about the graham crackers – is that 16 sleeves of crackers or just 16 individual squares (I think there are 4 squares in one sleeve)? Or do you know about how many cups in all to use? And – do you store leftovers in the freezer? Thank you – can’t want to try these!!
